Choosing the right flowers for a romantic bouquet

A romantic date bouquet doesn't need to be big, just a clear focal flower, something soft around it and some green. Start with roses (6 to 8 stems) as the focal flower; nothing says romance faster. Add lisianthus (3 to 4 stems), which look like loose, ruffled roses and soften the shape. Then a small filler like baby's breath or waxflower (5 to 6 stems) for an airy, garden-style look, and eucalyptus or ruscus (3 to 4 stems) to frame it. About 20 stems in all, easy to hold in one hand.

The step-by-step bouquet assembly

  1. Prep each stem: strip every leaf below where you'll tie the bouquet, and cut the stems at an angle.
  2. Build the spiral: hold one rose in the centre, then add roses one at a time, turning the bunch a little in your hand each time so the stems angle the same way. Stop at 6 to 8.
  3. Add lisianthus and filler: tuck the lisianthus and baby's breath in between the roses, leaving a few stems slightly taller so it doesn't look flat.
  4. Frame with greenery: add eucalyptus or ruscus around the outside for shape and volume.
  5. Bind and finish: tie it firmly with floral tape where your hand was, trim the stems level, and cover the tie with ribbon.

Made it in the afternoon? Keep it in water until you leave.

Local bouquet design, Toronto style

What you can buy in Toronto changes with the season. In summer you'll find more Ontario-grown flowers and greenery at markets; in winter most cut flowers are imported, and roses are the most reliable choice. Buy what looks freshest that week; stock or ranunculus can stand in for lisianthus.

If you'd rather not build it yourself, you can buy flowers in Toronto and York Region from us. We design every order by hand in our Oak Ridges studio from that day's flowers.
